  • 4 ripe pears, halved and cored
  • 1/2 cup fresh mixed berries (such as blueberries, raspberries, or blackberries)
  • 1/4 cup walnuts, chopped
  • 2 tbsp honey (plus extra for drizzling)
  • 2 oz blue cheese, crumbled
  • 1 tsp fresh thyme or rosemary (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Arrange the pear halves in a baking dish, cut side up. Drizzle with olive oil and season with a pinch of salt and pepper.
  3. Bake the pears in the preheated oven for 20-25 minutes, or until they are tender but still hold their shape.
  4. While the pears are baking, prepare the topping. In a small bowl, combine the mixed berries, chopped walnuts, and honey. Stir gently to combine.
  5. Once the pears are done baking, remove them from the oven and carefully spoon the berry and walnut mixture on top of each pear half.
  6. Sprinkle the crumbled blue cheese over the top of each pear, allowing the cheese to melt slightly.
  7. Return the pears to the oven for an additional 5-7 minutes, just until the blue cheese softens and the topping becomes slightly golden.
  8. Remove from the oven, drizzle with additional honey, and garnish with fresh thyme or rosemary if desired.
  9. Serve warm as a side dish, appetizer, or light dessert.
