- 2 bags (10 oz each) fresh spinach, steamed and drained
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/2 cup onion, finely chopped
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- 1 tablespoon olive oil (for sautéing)
- 2 tablespoons melted butter (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
- Heat the olive oil in a skillet over medium heat and sauté the chopped onion and garlic until soft and translucent, about 3-4 minutes.
- In a large bowl, combine the steamed spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, sautéed onion and garlic, eggs, salt, pepper, and nutmeg (if using). Mix well.
- Transfer the spinach mixture to the prepared baking dish, spreading it out evenly.
- In a small bowl, combine the breadcrumbs with melted butter and sprinkle it over the top of the casserole.
- Bake for 25-30 minutes, or until the top is golden and the casserole is set.
- Let cool for 5 minutes before serving.
Notes
Serve warm as a side dish or as a light main course. This casserole can be easily customized with additional vegetables or spices.
