Description

This Baked Spinach Casserole is a delicious and nutritious dish packed with flavor. Featuring creamy ricotta and mozzarella cheeses, fresh spinach, and a crunchy breadcrumb topping, it’s perfect as a side dish or a main course.


Ingredients

  • 2 bags (10 oz each) fresh spinach, steamed and drained
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/2 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon olive oil (for sautéing)
  • 2 tablespoons melted butter (for topping)

Instructions

  • Preheat your oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  • Heat the olive oil in a skillet over medium heat and sauté the chopped onion and garlic until soft and translucent, about 3-4 minutes.
  • In a large bowl, combine the steamed spinach, ricotta cheese, mozzarella cheese, Parmesan cheese, sautéed onion and garlic, eggs, salt, pepper, and nutmeg (if using). Mix well.
  • Transfer the spinach mixture to the prepared baking dish, spreading it out evenly.
  • In a small bowl, combine the breadcrumbs with melted butter and sprinkle it over the top of the casserole.
  • Bake for 25-30 minutes, or until the top is golden and the casserole is set.
  • Let cool for 5 minutes before serving.

Notes

Serve warm as a side dish or as a light main course. This casserole can be easily customized with additional vegetables or spices.
