- 2 medium yellow squash, sliced
- 2 medium zucchini, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss sliced squash and zucchini with olive oil, garlic powder, thyme, salt, and pepper.
- Spread the vegetables in a single layer on a baking sheet.
- Bake for 20-25 minutes, stirring halfway through, until tender and slightly golden.
- If desired, sprinkle Parmesan cheese on top during the last 5 minutes of baking.
- Remove from oven and serve warm.

- Add chopped fresh herbs like parsley or basil for extra flavor.
- Use a mix of summer squash varieties for color and taste.
- Try adding a squeeze of lemon juice before serving for brightness.
