Description
Balsamic Chicken and Tomatoes is a simple yet flavorful dish, featuring juicy chicken breasts glazed in balsamic vinegar and paired with fresh, roasted tomatoes. It’s a perfect weeknight dinner that’s both healthy and delicious.
Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 pint cherry or grape tomatoes, halved
- 1 tbsp fresh basil, chopped (for garnish)
- 1 tbsp balsamic glaze (optional, for drizzling)
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together olive oil, balsamic vinegar, honey, garlic powder, oregano, salt, and pepper.
- Place chicken breasts in a shallow dish or resealable bag and pour half of the balsamic mixture over the chicken. Marinate for at least 10 minutes (or up to 2 hours in the fridge).
- In a large oven-safe skillet, heat a little olive oil over medium heat. Once hot, add the chicken breasts and cook for 3–4 minutes per side, until golden brown. Remove from the skillet and set aside.
- In the same skillet, add the halved tomatoes and the remaining balsamic mixture. Stir to coat the tomatoes and cook for about 2 minutes until they start to soften.
- Return the chicken breasts to the skillet, placing them on top of the tomatoes. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
- Remove from the oven and sprinkle with fresh basil. Drizzle with optional balsamic glaze for extra flavor, if desired.
- Serve immediately, garnished with extra basil and accompanied by rice, pasta, or a salad.
Notes
- For a lower-carb option, serve the chicken with cauliflower rice or steamed vegetables.
- If you prefer a sweeter balsamic glaze, increase the amount of honey in the marinade.
- You can add some crumbled feta or goat cheese on top for extra flavor.
