Description

Balsamic Chicken and Tomatoes is a simple yet flavorful dish, featuring juicy chicken breasts glazed in balsamic vinegar and paired with fresh, roasted tomatoes. It’s a perfect weeknight dinner that’s both healthy and delicious.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 pint cherry or grape tomatoes, halved
  • 1 tbsp fresh basil, chopped (for garnish)
  • 1 tbsp balsamic glaze (optional, for drizzling)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a small bowl, whisk together olive oil, balsamic vinegar, honey, garlic powder, oregano, salt, and pepper.
  3. Place chicken breasts in a shallow dish or resealable bag and pour half of the balsamic mixture over the chicken. Marinate for at least 10 minutes (or up to 2 hours in the fridge).
  4. In a large oven-safe skillet, heat a little olive oil over medium heat. Once hot, add the chicken breasts and cook for 3–4 minutes per side, until golden brown. Remove from the skillet and set aside.
  5. In the same skillet, add the halved tomatoes and the remaining balsamic mixture. Stir to coat the tomatoes and cook for about 2 minutes until they start to soften.
  6. Return the chicken breasts to the skillet, placing them on top of the tomatoes. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
  7. Remove from the oven and sprinkle with fresh basil. Drizzle with optional balsamic glaze for extra flavor, if desired.
  8. Serve immediately, garnished with extra basil and accompanied by rice, pasta, or a salad.

Notes

  • For a lower-carb option, serve the chicken with cauliflower rice or steamed vegetables.
  • If you prefer a sweeter balsamic glaze, increase the amount of honey in the marinade.
  • You can add some crumbled feta or goat cheese on top for extra flavor.
