Description
This Balsamic Tomato and Parmesan Asparagus Delight is a flavorful and easy-to-make side dish that combines tender asparagus with juicy tomatoes, a drizzle of balsamic glaze, and a sprinkle of parmesan for the perfect balance of savory and tangy flavors.
Ingredients
Scale
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 1 pint cherry or grape tomatoes, halved
- 1 tablespoon olive oil
- Salt and freshly ground black pepper to taste
- 2 tablespoons balsamic vinegar
- 1/4 cup grated parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Prepare the Asparagus:
Preheat your oven to 400°F (200°C).
Arrange the trimmed asparagus on a baking sheet. Drizzle with olive oil and season with salt and pepper. Toss the asparagus to coat evenly. - Roast the Asparagus:
Roast in the preheated oven for 12-15 minutes, or until the asparagus is tender and slightly crispy on the edges. - Prepare the Tomatoes:
While the asparagus is roasting, slice the cherry or grape tomatoes in half. Set aside. - Assemble the Dish:
Once the asparagus is cooked, remove from the oven and transfer it to a serving dish.
Top with the halved tomatoes, and drizzle the balsamic vinegar over the vegetables. - Add Parmesan:
Sprinkle the grated parmesan cheese generously over the top of the asparagus and tomatoes. - Serve and Garnish:
Garnish with fresh basil or parsley, if desired, and serve immediately.
Notes
- You can add a drizzle of extra balsamic glaze for a sweeter finish if desired.
- If you prefer a bit more crunch, try roasting the tomatoes alongside the asparagus.
- This dish pairs wonderfully with grilled chicken or fish for a complete meal.
