Description

This Banana Bread Cake takes all the comforting flavors of classic banana bread and elevates it with a rich, tangy cream cheese frosting. Perfect for any occasion, this cake is moist, flavorful, and topped with a creamy frosting that makes each bite irresistible.

Ingredients

Scale

For the Banana Bread Cake:

  • 1 ½ cups mashed ripe bananas (about 34 bananas)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup buttermilk (or milk with 1 tablespoon lemon juice/vinegar as a substitute)

For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 34 cups powdered sugar (adjust to desired sweetness)

Instructions

  • Preheat Oven and Prepare Baking Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Add Wet Ingredients: Add the eggs, vanilla extract, and buttermilk to the butter-sugar mixture, blending well.
  • Mix Dry Ingredients: Gradually blend in the flour, baking soda, and salt, being careful not to overmix.
  • Add Bananas: Stir in the mashed bananas until just combined.
  • Bake the Cake: Pour the batter into the prepared baking dish and smooth the top. Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool the Cake: Allow the cake to cool completely in the dish on a wire rack.
  • Prepare Frosting: Beat together the softened butter and cream cheese until smooth. Gradually add powdered sugar and heavy whipping cream, beating until the frosting is creamy and spreadable.
  • Frost the Cake: Once the cake has cooled, spread the frosting over the top, creating a thick, smooth layer.
  • Serve: Slice, serve, and enjoy!

Notes

  • For a richer flavor, use overripe bananas as they are sweeter and more flavorful.
  • Be sure the cake is completely cooled before frosting to avoid melting the frosting.
  • You can adjust the sweetness of the frosting by adding more or less powdered sugar to suit your preference.
