Ingredients
Scale
For the Banana Bread Cake:
- 1 ½ cups mashed ripe bananas (about 3–4 bananas)
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk (or milk with 1 tablespoon lemon juice/vinegar as a substitute)
For the Cream Cheese Frosting:
- 8 oz cream cheese, softened
- ½ cup unsalted butter, softened
- 3–4 cups powdered sugar (adjust to desired sweetness)
Instructions
- Preheat Oven and Prepare Baking Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- Cream Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
- Add Wet Ingredients: Add the eggs, vanilla extract, and buttermilk to the butter-sugar mixture, blending well.
- Mix Dry Ingredients: Gradually blend in the flour, baking soda, and salt, being careful not to overmix.
- Add Bananas: Stir in the mashed bananas until just combined.
- Bake the Cake: Pour the batter into the prepared baking dish and smooth the top. Bake for 25-35 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the Cake: Allow the cake to cool completely in the dish on a wire rack.
- Prepare Frosting: Beat together the softened butter and cream cheese until smooth. Gradually add powdered sugar and heavy whipping cream, beating until the frosting is creamy and spreadable.
- Frost the Cake: Once the cake has cooled, spread the frosting over the top, creating a thick, smooth layer.
- Serve: Slice, serve, and enjoy!
Notes
- For a richer flavor, use overripe bananas as they are sweeter and more flavorful.
- Be sure the cake is completely cooled before frosting to avoid melting the frosting.
- You can adjust the sweetness of the frosting by adding more or less powdered sugar to suit your preference.
