Prepare the Graham Cracker Crust:
- In a bowl, mix the graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Divide the mixture among serving glasses or bowls and press down to form an even layer at the bottom.

Make the Cheesecake Filling:
- In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the whipped cream into the cream cheese mixture. Add sour cream, if using, and mix until combined.

Assemble the Parfaits:
- Add a layer of sliced bananas on top of the graham cracker crust in each glass.
- Spoon or pipe a layer of cheesecake filling on top of the bananas.
- Repeat the layers, ending with a layer of cheesecake filling on top.

- Refrigerate the parfaits for at least 2 hours to allow the flavors to meld and the cheesecake to firm up.
- Before serving, drizzle with honey (if using) and top with whipped cream if desired.
Notes
- To make it even more decadent, drizzle caramel sauce over the top of the parfaits.
- You can add other fruits like strawberries or blueberries for variation.
