Description

This Banana Pudding Banana Bread is a moist, flavorful twist on the classic banana bread! With the addition of creamy banana pudding, it takes the banana flavor to a whole new level of deliciousness. Perfect for breakfast, dessert, or a snack, this bread will quickly become a family favorite!

Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 box (3.4 oz) instant banana pudding mix
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup milk (or buttermilk for extra moisture)
  • 1/2 cup mini marshmallows (optional, for a pudding-like touch)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal.
  2. Mix Wet Ingredients:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas, sour cream, vanilla extract, and the instant banana pudding mix.
  3. Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, salt, and optional cinnamon.
  4. Mix Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined—be careful not to overmix.
  5. Add Marshmallows (Optional):
If using marshmallows, fold them into the batter gently at the end. This will give the bread a unique, pudding-like texture.
  6. Bake the Bread:
Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs.
  7. Cool and Serve:
Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve!

Notes

  • If you prefer a richer banana flavor, use overripe bananas.
  • You can add chocolate chips or chopped walnuts to the batter for added texture.
  • If you don’t have sour cream, you can substitute it with plain yogurt or buttermilk.
