Ingredients
Scale
- 2 ripe bananas, mashed
- 1 box (3.4 oz) instant banana pudding mix
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 cup milk (or buttermilk for extra moisture)
- 1/2 cup mini marshmallows (optional, for a pudding-like touch)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan, or line it with parchment paper for easy removal. - Mix Wet Ingredients:
In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the mashed bananas, sour cream, vanilla extract, and the instant banana pudding mix. - Combine Dry Ingredients:
In a separate bowl, whisk together the flour, baking soda, salt, and optional cinnamon. - Mix Wet and Dry Ingredients:
Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix just until combined—be careful not to overmix. - Add Marshmallows (Optional):
If using marshmallows, fold them into the batter gently at the end. This will give the bread a unique, pudding-like texture. - Bake the Bread:
Pour the batter into the prepared loaf pan. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. - Cool and Serve:
Allow the banana bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve!
Notes
- If you prefer a richer banana flavor, use overripe bananas.
- You can add chocolate chips or chopped walnuts to the batter for added texture.
- If you don’t have sour cream, you can substitute it with plain yogurt or buttermilk.
