- 3 cloves garlic, minced
- 1/4 cup fresh basil, chopped

- Wooden skewers (soaked in water for 30 minutes)
- For the Garlicky Whipped Ricotta:
- 1 cup ricotta cheese
- 1 tablespoon olive oil
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh basil, for garnish
Instructions
- In a large bowl, combine the chicken pieces, olive oil, minced garlic, chopped basil, lemon juice, salt, and pepper. Mix well and let marinate for at least 15 minutes (or up to 2 hours for more flavor).
- While the chicken marinates, prepare the garlicky whipped ricotta: In a food processor, combine the ricotta cheese, olive oil, minced garlic, lemon juice, salt, and pepper. Process until smooth and creamy. Adjust seasoning to taste.
- Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers.
- Grill the chicken skewers for 5-7 minutes per side, or until the chicken is fully cooked and has a nice char.
- Remove the chicken from the skewers and arrange on a platter. Serve with the garlicky whipped ricotta on the side for dipping.
- Garnish with additional fresh basil and serve immediately.
Notes
- For an extra burst of flavor, you can squeeze a little extra lemon juice over the chicken skewers before serving.
- If you prefer a spicier kick, feel free to add a pinch of red pepper flakes to the marinade.
- The whipped ricotta can be made ahead of time and stored in the fridge for up to 2 days.
