Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped

  • Wooden skewers (soaked in water for 30 minutes)
  • For the Garlicky Whipped Ricotta:
  • 1 cup ricotta cheese
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil, for garnish

Instructions

  1. In a large bowl, combine the chicken pieces, olive oil, minced garlic, chopped basil, lemon juice, salt, and pepper. Mix well and let marinate for at least 15 minutes (or up to 2 hours for more flavor).
  2. While the chicken marinates, prepare the garlicky whipped ricotta: In a food processor, combine the ricotta cheese, olive oil, minced garlic, lemon juice, salt, and pepper. Process until smooth and creamy. Adjust seasoning to taste.
  3. Preheat your grill or grill pan to medium-high heat. Thread the marinated chicken pieces onto the soaked wooden skewers.
  4. Grill the chicken skewers for 5-7 minutes per side, or until the chicken is fully cooked and has a nice char.
  5. Remove the chicken from the skewers and arrange on a platter. Serve with the garlicky whipped ricotta on the side for dipping.
  6. Garnish with additional fresh basil and serve immediately.

Notes

  • For an extra burst of flavor, you can squeeze a little extra lemon juice over the chicken skewers before serving.
  • If you prefer a spicier kick, feel free to add a pinch of red pepper flakes to the marinade.
