Description

Beef and Mushroom Stroganoff is a rich and creamy dish that combines tender beef, savory mushrooms, and a luscious sauce made with sour cream and broth.   • 1 lb beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp olive oil
  • 1 medium onion, diced
  • 2 cups mushrooms, sliced (cremini or button mushrooms work best)
  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 cup sour cream
  • 1/4 cup heavy cream
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Egg noodles, rice, or mashed potatoes (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
  2. In the same skillet, add the diced onion and cook for 2-3 minutes, or until softened. Add the sliced mushrooms and cook for another 4-5 minutes, until the mushrooms release their moisture and become golden brown.
  3. Add the minced garlic and cook for 1 more minute, until fragrant.
  4. Sprinkle the flour over the mushrooms and onions, stirring to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
  5. Slowly add the beef broth while stirring, followed by Worcestershire sauce and Dijon mustard. Bring the mixture to a simmer and cook for 5-6 minutes, or until the sauce thickens slightly.
  6. Stir in the sour cream and heavy cream, cooking for another 2-3 minutes until the sauce is smooth and creamy. Season with salt and pepper to taste.
  7. Add the cooked beef back into the skillet and stir to combine with the sauce. Cook for an additional 2-3 minutes, until the beef is heated through and coated in the sauce.
  8. Serve the Beef and Mushroom Stroganoff over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!

Notes

  • If you prefer a lighter version, you can substitute the sour cream and heavy cream with Greek yogurt and a little bit of milk.
  • For extra depth of flavor, you can add a splash of red wine to the sauce along with the beef broth.
