- 1 cup beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp Dijon mustard
- 1/2 cup sour cream
- 1/4 cup heavy cream
- Salt and black pepper to taste
- 2 tbsp fresh parsley, chopped (for garnish)
- Egg noodles, rice, or mashed potatoes (for serving)
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add the beef strips and cook for 2-3 minutes, or until browned. Remove the beef from the skillet and set aside.
- In the same skillet, add the diced onion and cook for 2-3 minutes, or until softened. Add the sliced mushrooms and cook for another 4-5 minutes, until the mushrooms release their moisture and become golden brown.
- Add the minced garlic and cook for 1 more minute, until fragrant.
- Sprinkle the flour over the mushrooms and onions, stirring to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
- Slowly add the beef broth while stirring, followed by Worcestershire sauce and Dijon mustard. Bring the mixture to a simmer and cook for 5-6 minutes, or until the sauce thickens slightly.
- Stir in the sour cream and heavy cream, cooking for another 2-3 minutes until the sauce is smooth and creamy. Season with salt and pepper to taste.
- Add the cooked beef back into the skillet and stir to combine with the sauce. Cook for an additional 2-3 minutes, until the beef is heated through and coated in the sauce.
- Serve the Beef and Mushroom Stroganoff over egg noodles, rice, or mashed potatoes. Garnish with fresh parsley and enjoy!
Notes
- If you prefer a lighter version, you can substitute the sour cream and heavy cream with Greek yogurt and a little bit of milk.
