Ingredients

Scale

Main Ingredients

  • Corn or flour tortillas (soft, pliable) โ€“ about 10-12 tortillas
  • 2 cups shredded cheese blend (cheddar and Monterey Jack)
  • 2 cups cooked chicken or ground beef
  • 1 1/2 cups enchilada sauce (rich and spicy red sauce)
  • 1 medium onion, diced
  • 2-3 cloves garlic, minced
  • 1/2 cup diced green chilies or jalapeรฑos
  • 1/2 cup black beans or corn (optional)
  • 2 tbsp olive oil

For Garnish

  • Fresh cilantro or parsley, chopped (for garnish)

Instructions

  1. Prepare the Filling: Heat olive oil in a skillet over medium heat. Sautรฉ diced onions and minced garlic until fragrant and translucent. Add cooked chicken or ground beef, then mix in diced green chilies and optional black beans or corn. Season with salt and pepper. Cook for a few minutes to let flavors meld.
  2. Layer the Bake: Grease a baking dish and pour a thin layer of enchilada sauce on the bottom. Place a layer of tortillas over the sauce, spread half of the filling evenly on top, then sprinkle half of the shredded cheese. Repeat layering with remaining tortillas, filling, sauce, and cheese.
  3. Bake Until Bubbling: Cover the dish with foil and bake in a preheated oven at 375ยฐF (190ยฐC) for 20 minutes. Remove the foil and bake an additional 10 minutes until the cheese is browned and bubbly.
  4. Garnish and Serve: Let the bake rest for about 5 minutes after removing from the oven. Sprinkle with freshly chopped cilantro or parsley and serve warm with preferred sides or toppings.

Notes

  • Warm tortillas before layering to make them more pliable and avoid cracking.
  • Use freshly shredded cheese for better melting and texture.
  • Do not skip the enchilada sauce as it adds moisture and essential flavor.
  • Allow the bake to rest 5 minutes after baking for easier slicing and enhanced flavor melding.
  • For extra texture, sprinkle crushed tortilla chips or fried onions on top before baking.
