- 2 teaspoons rice vinegar
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1 tablespoon ginger, finely grated (optional)

Instructions
- Prepare the Beef and Mushrooms:
- Lay the thinly sliced beef flat on a clean surface. Take small bunches of enoki mushrooms (about 10-15 mushrooms per roll) and place them at one end of each beef slice.
- Roll the beef around the enoki mushrooms, securing them with toothpicks if necessary. Repeat until all beef slices are rolled up.
- Make the Sauce:
- In a small bowl, combine the soy sauce, sesame oil, oyster sauce (if using), rice vinegar, sugar, garlic, and grated ginger. Stir until the sugar is dissolved and the sauce is well-mixed.
- Cook the Beef Rolls:
- Heat a large skillet or frying pan over medium-high heat and add the vegetable oil.
- Add the beef rolls to the pan and sear on all sides, turning occasionally, for about 5-6 minutes, or until the beef is cooked through and browned. If the beef is browning too quickly, reduce the heat to medium.
- Add the Sauce:
- Once the beef rolls are cooked, pour the prepared sauce over the rolls. Let it simmer for 1-2 minutes, spooning the sauce over the rolls as it thickens slightly.
- Serve:
- Remove the beef rolls from the skillet and discard any toothpicks (if used).
- Garnish with sesame seeds and chopped green onions, if desired. Serve hot with steamed rice or vegetables.
Notes
- For a spicier version, add a little bit of chili flakes or sriracha to the sauce.
- You can use other mushrooms like shiitake or cremini if enoki mushrooms are not available, though the texture will be different.
