Description

  • 8 oz (225g) enoki mushrooms, trimmed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce (optional for extra flavor)
  • 2 teaspoons rice vinegar
  • 1 teaspoon sugar
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, finely grated (optional)
  • 1 tablespoon vegetable oil (for cooking)
  • Sesame seeds (for garnish, optional)
  • Chopped green onions (for garnish, optional)

Instructions

  1. Prepare the Beef and Mushrooms:
    • Lay the thinly sliced beef flat on a clean surface. Take small bunches of enoki mushrooms (about 10-15 mushrooms per roll) and place them at one end of each beef slice.
    • Roll the beef around the enoki mushrooms, securing them with toothpicks if necessary. Repeat until all beef slices are rolled up.
  2. Make the Sauce:
    • In a small bowl, combine the soy sauce, sesame oil, oyster sauce (if using), rice vinegar, sugar, garlic, and grated ginger. Stir until the sugar is dissolved and the sauce is well-mixed.
  3. Cook the Beef Rolls:
    • Heat a large skillet or frying pan over medium-high heat and add the vegetable oil.
    • Add the beef rolls to the pan and sear on all sides, turning occasionally, for about 5-6 minutes, or until the beef is cooked through and browned. If the beef is browning too quickly, reduce the heat to medium.
  4. Add the Sauce:
    • Once the beef rolls are cooked, pour the prepared sauce over the rolls. Let it simmer for 1-2 minutes, spooning the sauce over the rolls as it thickens slightly.
  5. Serve:
    • Remove the beef rolls from the skillet and discard any toothpicks (if used).
    • Garnish with sesame seeds and chopped green onions, if desired. Serve hot with steamed rice or vegetables.

Notes

  • For a spicier version, add a little bit of chili flakes or sriracha to the sauce.
  • You can use other mushrooms like shiitake or cremini if enoki mushrooms are not available, though the texture will be different.
  • If you prefer, you can grill the rolls instead of frying them in the pan for a smoky flavor.
