  • 1 medium onion, chopped
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (6 oz) can tomato paste
  • 1 tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp crushed red pepper flakes (optional)
  • 2 cups uncooked egg noodles
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  • Cook the Beef:
    • In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
  • Add Tomatoes and Seasoning:
    • Stir in the diced tomatoes (with juice), tomato paste, salt, black pepper, garlic powder, and crushed red pepper flakes. Let the mixture simmer for 5-10 minutes to combine the flavors.
  • Cook Noodles:
    • While the beef mixture simmers, cook the egg noodles according to package instructions until al dente. Drain and set aside.
  • Prepare the Creamy Mixture:
    • In a medium bowl, mix the sour cream and cottage cheese together. Set aside.
  • Layer the Casserole:
    • In a greased 9×13-inch baking dish, layer half of the cooked noodles. Spread the sour cream and cottage cheese mixture over the noodles, followed by the remaining noodles.
  • Add the Beef:
    • Pour the beef and tomato mixture evenly over the top.
  • Add Cheese:
    • Sprinkle the shredded cheddar and mozzarella cheeses on top of the casserole.
  • Bake:
    • Cover the dish with foil and bake for 20-25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
  • Garnish and Serve:
