- 1 medium onion, chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 1 (6 oz) can tomato paste
- 1 tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder
- ¼ tsp crushed red pepper flakes (optional)
- 2 cups uncooked egg noodles
- 1 cup sour cream
- 1 cup cottage cheese
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Cook the Beef:
- In a large skillet, cook the ground beef and chopped onion over medium heat until the beef is browned and the onion is softened. Drain any excess fat.
- Add Tomatoes and Seasoning:
- Stir in the diced tomatoes (with juice), tomato paste, salt, black pepper, garlic powder, and crushed red pepper flakes. Let the mixture simmer for 5-10 minutes to combine the flavors.
- Cook Noodles:
- While the beef mixture simmers, cook the egg noodles according to package instructions until al dente. Drain and set aside.
- Prepare the Creamy Mixture:
- In a medium bowl, mix the sour cream and cottage cheese together. Set aside.
- Layer the Casserole:
- In a greased 9×13-inch baking dish, layer half of the cooked noodles. Spread the sour cream and cottage cheese mixture over the noodles, followed by the remaining noodles.
- Add the Beef:
- Pour the beef and tomato mixture evenly over the top.
- Add Cheese:
- Sprinkle the shredded cheddar and mozzarella cheeses on top of the casserole.
- Bake:
- Cover the dish with foil and bake for 20-25 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and slightly golden.
- Garnish and Serve:
- Remove from the oven, sprinkle with chopped parsley, and let the casserole rest for a few minutes before serving.
