For the Beef Nachos:

 

  • 1 lb ground beef
  • 1 packet taco seasoning mix (or homemade taco seasoning)
  • 1/4 cup water
  • 1 bag tortilla chips (about 1012 oz)
  • 2 cups shredded cheddar cheese (or a mix of cheddar and Monterey Jack)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/4 cup sliced black olives
  • 1/4 cup diced red onion
  • 1/4 cup chopped fresh cilantro (for garnish)
  • 1 jalapeño, sliced (optional)
  • 1/4 cup sour cream (for serving)
  • Salsa (for serving)
  • Guacamole (for serving)

Instructions

  1. Cook the Ground Beef:
    In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the taco seasoning mix and 1/4 cup of water, stirring to combine. Cook for 2-3 minutes until the beef is fully seasoned and the water has mostly evaporated. Set aside.

  2. Prepare the Nacho Base:
    Preheat your oven to 375°F (190°C). Spread the tortilla chips evenly on a large baking sheet or oven-safe dish.

  3. Assemble the Nachos:
    Evenly distribute the cooked ground beef over the tortilla chips. Sprinkle the shredded cheese on top, making sure it covers the beef and chips generously.

  4. Bake the Nachos:
    Place the assembled nachos in the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly.

  5. Top the Nachos:
    Once the nachos are out of the oven, top them with diced tomatoes, black olives, red onion, jalapeños (if using), and fresh cilantro.

  6. Serve:
    Serve the nachos immediately with sides of sour cream, salsa, and guacamole.

Notes

  • For Extra Flavor: Add some green onions, bell peppers, or even corn to the nachos for more color and flavor.
