This Beef Potato Cheese Casserole is the ultimate comfort food. It’s a hearty, cheesy dish made with layers of seasoned ground beef, tender potatoes, and gooey melted cheese. Perfect for busy weeknights or a cozy family dinner, this casserole is simple to make and will leave everyone asking for seconds. Trust me, you’re going to love this!

Ingredients

Scale
  • 1 lb ground beef
  • 4 medium potatoes (peeled and thinly sliced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1/2 cup milk
  • 2 tbsp olive oil (for greasing)

Instructions

  1. Preheat the oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with olive oil.

  2. Cook the ground beef:
In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spoon as it cooks. Drain any excess fat. Add the chopped onion and minced garlic, cooking for 2-3 minutes until softened.

  3. Season the beef:
Stir in salt, pepper, and paprika, then remove from heat and set aside.

  4. Prepare the creamy sauce:
In a separate bowl, combine the cream of mushroom soup, sour cream, and milk. Stir until smooth.

  5. Layer the casserole:
In the prepared baking dish, layer half of the sliced potatoes. Top with half of the ground beef mixture, followed by half of the creamy sauce. Sprinkle a generous amount of shredded cheddar cheese over the sauce. Repeat the layers, ending with a layer of cheese on top.

  6. Bake the casserole:
Cover the dish with aluminum foil and bake for 45 minutes. After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown.

  7. Serve and enjoy:
Let the casserole sit for 5-10 minutes before serving. Enjoy your hearty, cheesy casserole!

Notes

  • If you like extra cheese, feel free to add more shredded cheddar to each layer or on top before baking.
  • You can substitute the ground beef for ground turkey or chicken for a lighter version.
  • To save time, you can use frozen hash browns instead of slicing fresh potatoes.
