- 1.5 lbs beef stew meat, cut into chunks
- 2 tbsp olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup peas (optional)
- 2 tbsp tomato paste
- 2 tsp Worcestershire sauce
- Salt and pepper, to taste
- 4 cups prepared mashed potatoes
- 2 tbsp butter
Instructions
- Preheat oven to 375°F (190°C).
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown beef chunks on all sides, then remove and set aside.
- Add onion and garlic to the pot; sauté until softened.
- Return beef to pot. Stir in tomato paste and Worcestershire sauce.
- Pour in beef broth, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
- Add carrots, celery, and peas; cook until vegetables are tender, about 15 minutes.
- Transfer stew to a baking dish. Spread mashed potatoes evenly over the top and dot with butter.
- Bake for 20-25 minutes until the potato topping is golden and heated through.
- Let rest for a few minutes before serving.
Notes
- Use leftover mashed potatoes or instant mashed potatoes for convenience.
- Add herbs like thyme or rosemary for extra flavor.
- For a thicker stew, mix 1 tbsp flour with cold water and stir into stew before baking.
