Description

Ingredients

  • 1.5 lbs beef stew meat, cut into chunks
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups celery, sliced
  • 1 cup peas (optional)
  • 2 tbsp tomato paste
  • 2 tsp Worcestershire sauce
  • Salt and pepper, to taste
  • 4 cups prepared mashed potatoes
  • 2 tbsp butter

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Brown beef chunks on all sides, then remove and set aside.
  3. Add onion and garlic to the pot; sauté until softened.
  4. Return beef to pot. Stir in tomato paste and Worcestershire sauce.
  5. Pour in beef broth, bring to a boil, then reduce heat and simmer for 1.5 to 2 hours until beef is tender.
  6. Add carrots, celery, and peas; cook until vegetables are tender, about 15 minutes.
  7. Transfer stew to a baking dish. Spread mashed potatoes evenly over the top and dot with butter.
  8. Bake for 20-25 minutes until the potato topping is golden and heated through.
  9. Let rest for a few minutes before serving.

  • Use leftover mashed potatoes or instant mashed potatoes for convenience.
  • Add herbs like thyme or rosemary for extra flavor.
  • For a thicker stew, mix 1 tbsp flour with cold water and stir into stew before baking.
