Ingredients

1 lb ground beef

2 medium zucchinis, diced

1/2 onion, diced

1 cup cherry tomatoes, halved (or 1 can diced tomatoes, drained)

2 cloves garlic, minced

1 tablespoon olive oil

1/2 teaspoon dried oregano

1/2 teaspoon smoked paprika

Salt and pepper, to taste

Optional: shredded mozzarella or Parmesan for topping

Instructions

Cook the beef:
In a large skillet over medium heat, cook ground beef until browned, breaking it up as it cooks. Drain excess fat if needed. -
Sauté the veggies:
Push the beef to one side of the skillet. Add olive oil to the other side and sauté onions and garlic for 2–3 minutes, until fragrant. -
Add zucchini and tomatoes:
Mix the zucchini and tomatoes into the beef. Sprinkle with oregano, smoked paprika, salt, and pepper. Cook for 7–10 minutes, stirring occasionally, until zucchini is tender and tomatoes are softened. -
Finish and serve:
Taste and adjust seasoning. Top with optional shredded cheese and let it melt before serving. Garnish with fresh parsley or basil.
