Ingredients

  • 1 lb ground beef

  • 2 medium zucchinis, diced

  • 1/2 onion, diced

  • 1 cup cherry tomatoes, halved (or 1 can diced tomatoes, drained)

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon smoked paprika

  • Salt and pepper, to taste

  • Optional: shredded mozzarella or Parmesan for topping

  • Fresh parsley or basil, for garnish


Instructions

  1. Cook the beef:
    In a large skillet over medium heat, cook ground beef until browned, breaking it up as it cooks. Drain excess fat if needed.

  2. Sauté the veggies:
    Push the beef to one side of the skillet. Add olive oil to the other side and sauté onions and garlic for 2–3 minutes, until fragrant.

  3. Add zucchini and tomatoes:
    Mix the zucchini and tomatoes into the beef. Sprinkle with oregano, smoked paprika, salt, and pepper. Cook for 7–10 minutes, stirring occasionally, until zucchini is tender and tomatoes are softened.

  4. Finish and serve:
    Taste and adjust seasoning. Top with optional shredded cheese and let it melt before serving. Garnish with fresh parsley or basil.

Notes

  • Add red pepper flakes if you like it spicy.

  • Swap in ground turkey or chicken for a lighter version.
