Description

Bell Pepper Nachos are a healthy and delicious alternative to traditional nachos. Made with bell peppers instead of tortilla chips, this dish is packed with flavor and nutrients, perfect for a quick snack, appetizer, or even a light meal.


Ingredients

  • Bell peppers, chopped
  • 1 pound ground beef, cooked and seasoned with taco seasoning
  • Taco sauce
  • 1½ cups Mexican cheese blend, shredded
  • Chopped bell peppers (additional for topping)
  • Chopped onions
  • Chopped tomatoes
  • Extra Mexican cheese, shredded (for topping)

Instructions

  • Preheat your oven to 350°F (175°C).
  • Lightly spray a glass baking pan with cooking spray.
  • Spread the chopped bell peppers evenly across the bottom of the pan.
  • Top the bell peppers with the taco-seasoned ground beef.
  • Drizzle taco sauce over the beef and bell peppers.
  • Sprinkle 1½ cups of shredded Mexican cheese over the taco sauce.
  • Add the chopped bell peppers, onions, and tomatoes on top.
  • Sprinkle the remaining Mexican cheese over the vegetables.
  • Bake uncovered in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
  • Remove from the oven and serve hot.
