Description

This Berry Croissant Bake is the perfect breakfast or brunch dish! Layers of flaky croissants, sweet mixed berries, and a rich custard come together to create a deliciously indulgent treat that everyone will love.

Ingredients

Scale
  • 4 large croissants (preferably a day or two old, cut into chunks)
  • 1 ½ cups mixed berries (such as strawberries, blueberries, raspberries, or blackberries)
  • 4 large eggs
  • 1 cup whole milk (or any milk of choice)
  • ½ cup heavy cream
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon (optional)
  • ¼ tsp salt
  • 2 tbsp butter, melted

  • Powdered sugar, for garnish (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.

  2. Prepare the Croissants: Tear the croissants into large chunks and arrange them evenly in the prepared baking dish. Sprinkle the mixed berries over the croissant pieces.

  3. Make the Custard: In a medium bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon (if using), and salt until smooth and fully combined.

  4. Assemble the Bake: Pour the custard mixture over the croissant chunks, making sure the croissants are soaked through. Gently press the croissants down with a spoon to ensure they are fully coated in the custard.

  5. Add Butter: Drizzle the melted butter over the top of the mixture.

  6. Bake: Bake in the preheated oven for 30-35 minutes, or until the top is golden and the custard has set. You can check for doneness by inserting a knife into the center; it should come out clean.

  7. Serve: Let the bake cool for a few minutes before serving. Garnish with powdered sugar if desired and enjoy!

Notes

  • You can use any berry combination you like, or even add other fruits such as sliced bananas or peaches.
  • If you prefer a sweeter croissant bake, you can increase the sugar to ¾ cup or drizzle the top with maple syrup before baking.

  • This can be made the night before! Simply assemble the bake and cover it with plastic wrap or foil, then refrigerate overnight. Bake the next morning, adding a few extra minutes to the cook time if needed.
