Description

Deliciously creamy cheesecake bites swirled with a vibrant mixed berry puree, these bite-sized treats are perfect for any occasion, especially gatherings and celebrations.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp granulated sugar
  • 5 tbsp melted unsalted butter

For the Cheesecake:

  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup sour cream

For the Berry Swirl:

  • 1/2 cup mixed berry puree (strawberries, blueberries, raspberries)
  • 2 tbsp sugar

Instructions

  1. Preheat & Prep: Preheat your oven to 325°F (163°C). Line a 12-cup muffin tin with paper liners.
  2. Make the Crust: In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly coated. Press about 1 tbsp of the mixture into each liner, pressing down firmly. Bake for 5 minutes, then let cool.
  3. Prepare the Cheesecake Batter: In a large bowl, beat cream cheese and sugar until smooth. Add eggs, one at a time, mixing well after each addition. Mix in vanilla extract and sour cream until smooth and creamy.
  4. Create the Berry Swirl: In a separate bowl, combine the berry puree and sugar. Drop small spoonfuls of the puree onto each cheesecake and use a toothpick to create swirls.
  5. Bake the Cheesecake Bites: Pour the cheesecake batter over each crust, filling the liners about 3/4 full. Swirl the berry mixture into each bite. Bake for 18-22 minutes, or until the centers are set.
  6. Cool & Chill: Let the cheesecake bites cool completely, then refrigerate for at least 2 hours before serving.
