- 16 large white mushrooms (stems removed, cleaned)
- 8 oz cream cheese, softened
- ¼ cup grated Parmesan cheese
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh parsley, chopped (plus more for garnish)
- 1 tbsp fresh thyme leaves, chopped (optional)
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ cup breadcrumbs (optional for crunch)
- 2 tbsp finely chopped green onions (optional)
For Topping (Optional):
- Extra Parmesan cheese for sprinkling
- Fresh parsley for garnish
Instructions
- Prepare the mushrooms:
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Clean the mushrooms with a damp cloth and remove the stems. Set the mushroom caps aside.
2. Make the filling:
- In a mixing bowl, combine the softened cream cheese, melted butter, Parmesan cheese, garlic, parsley, thyme (if using), salt, and pepper. Stir until smooth and well-combined.
- If using, mix in breadcrumbs to give the filling extra texture.
3. Stuff the mushrooms:
- Spoon the cream cheese mixture into each mushroom cap, pressing gently to pack the filling.
- Arrange the stuffed mushrooms on the prepared baking sheet.
4. Bake:
- Bake the stuffed mushrooms in the preheated oven for 20-25 minutes, or until the mushrooms are tender and the filling is golden brown on top.
5. Garnish and serve:
- Sprinkle the baked mushrooms with extra Parmesan cheese and fresh parsley for garnish.
- Serve warm as an appetizer or side dish for your Christmas celebration.
Notes
- For a lighter version, you can replace the cream cheese with ricotta cheese or Greek yogurt.
- You can make the stuffed mushrooms ahead of time by prepping them and refrigerating them until you’re ready to bake. Just add a few extra minutes to the baking time if baking from cold.
- For a more decadent version, top the stuffed mushrooms with crumbled bacon or prosciutto before baking.
