Description

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon orange zest (from about 1 orange)
  • 1 cup fresh or dried cranberries (if using dried, soak in warm water for 10 minutes)
  • 1 tablespoon coarse sugar (for topping)
  • 1 cup powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest (optional)

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.
  • In a separate bowl, whisk together the egg, heavy cream, vanilla extract, and orange zest.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix.
  • Fold in the cranberries.
  • Turn the dough out onto a lightly floured surface and gently knead it just a few times to bring it together. Pat the dough into a 1-inch thick disk.
  • Use a sharp knife to cut the dough into 8 wedges (like a pizza).
  • Place the scones on the prepared baking sheet, spacing them about 2 inches apart.
  • Sprinkle the tops with coarse sugar for a little crunch and sparkle.
  • Bake in the preheated oven for 18-20 minutes, or until the scones are golden brown on the edges and cooked through.
  • Allow the scones to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
  • In a small bowl, whisk together the powdered sugar, orange juice, and orange zest (if using) until smooth. The glaze should be pourable but not too thin.
  • Once the scones have cooled, drizzle the orange glaze over the top of each scone. Allow the glaze to set before serving.

Notes

  • For a more intense orange flavor, use extra orange zest in the glaze.
  • You can substitute dried cranberries for fresh cranberries, but make sure to soak them first.
