Description

This refreshing and flavorful homemade salsa combines the richness of whole tomatoes with the kick of jalapeños and the zest of lime. Perfect for dipping or as a topping for your favorite dishes, this salsa is quick to make and sure to impress!


Ingredients

  • 1 can (28 oz) whole tomatoes with juice
  • 2 cans (10 oz each) Rotel diced tomatoes and green chilies
  • 1/4 cup chopped onion
  • 1 clove garlic, minced
  • 1 whole jalapeño, quartered and sliced thin
  • 1/4 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cumin
  • 1/2 cup chopped cilantro (more to taste)
  • Juice of 1/2 lime

Instructions

  • In a large mixing bowl, combine the whole tomatoes with their juice and the Rotel diced tomatoes and green chilies.
  • Add the chopped onion, minced garlic, and sliced jalapeño to the bowl.
  • Sprinkle in the sugar, salt, and ground cumin. Stir everything together until well mixed.
  • Gently fold in the chopped cilantro, adjusting the amount to your taste.
  • Squeeze in the juice of half a lime and mix again.
  • Taste your salsa and adjust seasoning if needed; you can add more lime juice, salt, or cilantro if you like.
  • Let the salsa sit for at least 30 minutes to allow the flavors to blend beautifully.
