  • 1 1/2 cups all-purpose flour

For the Filling:

  • 1 cup packed brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves (lightly toasted if desired)

Instructions

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. Prepare the Crust:
    In a medium bowl, mix together the flour, sugar, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared pan. Bake the crust for 12-15 minutes, or until golden brown. Remove from the oven and set aside to cool slightly.
  3. Prepare the Filling:
    In a large bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth. Stir in the toasted pecans, making sure they are evenly coated.
  4. Assemble the Bars:
    Pour the pecan mixture over the partially baked crust, spreading it out evenly.
  5. Bake the Bars:
    Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and lightly browned. The bars should be firm when gently pressed but will continue to firm up as they cool.
  6. Cool and Slice:
    Allow the bars to cool completely in the pan on a wire rack. Once cooled, remove the bars from the pan using the parchment paper, then slice into squares or bars.

Notes

  • For extra flavor, toast the pecans in a dry pan over medium heat for 5-7 minutes, being careful not to burn them.
