- 1 cup packed brown sugar
- 1/2 cup corn syrup
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 1/2 teaspoons vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves (lightly toasted if desired)
Instructions
- Preheat the Oven:
Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it. - Prepare the Crust:
In a medium bowl, mix together the flour, sugar, and salt. Cut in the cold cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press the mixture evenly into the prepared pan. Bake the crust for 12-15 minutes, or until golden brown. Remove from the oven and set aside to cool slightly. - Prepare the Filling:
In a large bowl, whisk together the brown sugar, corn syrup, melted butter, eggs, vanilla extract, and salt until smooth. Stir in the toasted pecans, making sure they are evenly coated. - Assemble the Bars:
Pour the pecan mixture over the partially baked crust, spreading it out evenly. - Bake the Bars:
Return the pan to the oven and bake for 25-30 minutes, or until the filling is set and lightly browned. The bars should be firm when gently pressed but will continue to firm up as they cool. - Cool and Slice:
Allow the bars to cool completely in the pan on a wire rack. Once cooled, remove the bars from the pan using the parchment paper, then slice into squares or bars.
Notes
- For extra flavor, toast the pecans in a dry pan over medium heat for 5-7 minutes, being careful not to burn them.
