Ingredients
Scale
- 8 oz cream cheese, softened
- 36 Biscoff cookies (approximately 11 oz), finely crushed
- 1/4 cup Biscoff cookie butter
- 10–12 oz white chocolate, finely chopped
- 2 tbsp Biscoff cookie butter (optional, for drizzle)
Instructions
- Prepare the Baking Sheet:
Line a baking sheet with parchment paper and set it aside for placing the truffles later. - Crush the Cookies:
Place the Biscoff cookies in a food processor and pulse until they form fine crumbs. You may need to do this in batches depending on your food processor’s size. - Mix the Dough:
In a microwave-safe bowl, heat 1/4 cup Biscoff cookie butter for 15-20 seconds until softened. Add the softened Biscoff cookie butter and cream cheese to the food processor with the crushed cookie crumbs. Pulse until the mixture forms a thick dough-like consistency. - Shape the Truffles:
Scoop the dough into 1-inch portions and roll them into balls using your hands. Place the balls onto the prepared baking sheet. Chill them in the refrigerator for at least 1 hour, or in the freezer for 20 minutes to help them firm up. - Melt the White Chocolate:
Before removing the truffles from the fridge, melt the white chocolate in the microwave in 30-second intervals. Stir after each interval until the chocolate is smooth and fully melted. - Coat the Truffles:
Using a fork or candy-dipping tool, dip each chilled truffle ball into the melted white chocolate, ensuring that each ball is fully coated. Let any excess chocolate drip off before placing the truffle back onto the parchment paper. - Chill to Set:
Return the baking sheet to the refrigerator for an additional hour or until the white chocolate coating is fully set and the truffles are firm. - Decorate (Optional):
Heat 2 tablespoons of Biscoff cookie butter in the microwave for 15 seconds, then stir. Drizzle or pipe the melted Biscoff cookie butter over the set truffles. Return the truffles to the refrigerator to set the drizzle. - Serve and Enjoy:
Once the truffles are set, serve them immediately, or store them in an airtight container in the refrigerator for up to 1 week.
Notes
- If you prefer a richer flavor, use more Biscoff cookie butter in the filling or drizzle extra on top.
- Make sure the truffles are thoroughly chilled before dipping in chocolate to ensure they hold their shape.
- These truffles can be stored for up to 1 week in the refrigerator or frozen for longer storage.
- If you don’t have a food processor, you can crush the cookies in a zip-top bag using a rolling pin.
