- 500g ground bison
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 large egg
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil (for frying)
Instructions
- Preheat oven to 190°C (375°F).
- In a bowl, soak breadcrumbs in milk for 5 minutes.
- Add ground bison, Parmesan, onion, garlic, egg, parsley, oregano, salt, and pepper to the breadcrumb mixture.
- Mix gently until combined, being careful not to overwork the meat.
- Form mixture into 16 evenly sized meatballs.
- Heat olive oil in a skillet over medium heat.
- Brown meatballs on all sides, about 5 minutes total.
- Transfer browned meatballs to a baking sheet and bake for 10-12 minutes until cooked through.
- Serve with your favorite sauce or pasta.
Notes
- Use lean bison for healthier meatballs.
- For extra flavor, add a pinch of red pepper flakes.
- Can be made ahead and frozen before cooking.
