For the Panna Cotta:

  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup goat’s cheese (softened)

  • 2 tablespoons cold water

For the Blackberry Compote:

  • 2 cups fresh blackberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon water (if needed)

Instructions

  1. Prepare the Gelatin: In a small bowl, sprinkle the powdered gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes.
  2. Make the Panna Cotta Base: In a medium saucepan, combine the heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the mixture is warm but not boiling. Remove from heat.
  3. Incorporate the Gelatin: Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add the softened goat’s cheese and whisk until smooth and well combined.
  4. Chill the Panna Cotta: Pour the panna cotta mixture into individual serving glasses or molds. Refrigerate for at least 4 hours, or preferably overnight, until fully set.
  5. Make the Blackberry Compote: While the panna cotta sets, prepare the compote. In a small saucepan, combine the blackberries, sugar, lemon juice, and vanilla extract. Cook over medium heat for 5-7 minutes, mashing the blackberries with a spoon until they release their juices. If the compote is too thick, add a tablespoon of water. Simmer for an additional 2-3 minutes until slightly thickened. Remove from heat and let cool.
  6. Serve: Once the panna cotta is set, top with a generous spoonful of the blackberry compote before serving. Garnish with fresh blackberries and mint leaves if desired.

  • You can make the panna cotta and compote ahead of time, as they keep well in the fridge for up to 2 days.
