For the Panna Cotta:
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup goat’s cheese (softened)
- 1/4 cup granulated sugar

- 2 tablespoons cold water
For the Blackberry Compote:
- 2 cups fresh blackberries
- 1/4 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon water (if needed)
Instructions
- Prepare the Gelatin: In a small bowl, sprinkle the powdered gelatin over 2 tablespoons of cold water and let it bloom for 5 minutes.
- Make the Panna Cotta Base: In a medium saucepan, combine the heavy cream, whole milk, sugar, and vanilla extract. Heat over medium heat until the mixture is warm but not boiling. Remove from heat.
- Incorporate the Gelatin: Add the bloomed gelatin to the warm cream mixture and stir until completely dissolved. Add the softened goat’s cheese and whisk until smooth and well combined.
- Chill the Panna Cotta: Pour the panna cotta mixture into individual serving glasses or molds. Refrigerate for at least 4 hours, or preferably overnight, until fully set.
- Make the Blackberry Compote: While the panna cotta sets, prepare the compote. In a small saucepan, combine the blackberries, sugar, lemon juice, and vanilla extract. Cook over medium heat for 5-7 minutes, mashing the blackberries with a spoon until they release their juices. If the compote is too thick, add a tablespoon of water. Simmer for an additional 2-3 minutes until slightly thickened. Remove from heat and let cool.
- Serve: Once the panna cotta is set, top with a generous spoonful of the blackberry compote before serving. Garnish with fresh blackberries and mint leaves if desired.

- You can make the panna cotta and compote ahead of time, as they keep well in the fridge for up to 2 days.
- For a smoother panna cotta, you can strain the cream mixture before pouring it into the glasses to remove any lumps.
