Description

These delightful Blackberry Hand Pies are perfect for a sweet snack or dessert! Flaky pastry filled with juicy blackberries makes for an irresistible treat.


Ingredients

  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 package refrigerated pie crusts (2 crusts)
  • 1 egg (for egg wash)
  • Sugar for sprinkling

Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a bowl, combine blackberries, sugar, cornstarch, and vanilla extract. Gently mix and let sit for 10 minutes.
  • Roll out the pie crusts and cut into circles (about 4 inches in diameter).
  • Spoon a tablespoon of the blackberry mixture onto one half of each circle. Fold over and crimp the edges with a fork to seal.
  • Beat the egg and brush the tops of the hand pies. Sprinkle with sugar.
  • Bake for 20–25 minutes until golden brown. Let cool before serving.

Notes

Allow the hand pies to cool slightly before serving to avoid burns from the hot filling.
