- 2 cups fresh blackberries
- 1/2 cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 package refrigerated pie crusts (2 crusts)
- 1 egg (for egg wash)
- Sugar for sprinkling
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine blackberries, sugar, cornstarch, and vanilla extract. Gently mix and let sit for 10 minutes.
- Roll out the pie crusts and cut into circles (about 4 inches in diameter).
- Spoon a tablespoon of the blackberry mixture onto one half of each circle. Fold over and crimp the edges with a fork to seal.
- Beat the egg and brush the tops of the hand pies. Sprinkle with sugar.
- Bake for 20–25 minutes until golden brown. Let cool before serving.
Notes
Allow the hand pies to cool slightly before serving to avoid burns from the hot filling.
