Description

  • 2 tbsp water (if using gelatin)

Instructions

  • Prepare the Blackberries: In a blender or food processor, puree the blackberries until smooth. Strain the puree through a fine mesh sieve to remove the seeds, pressing down with a spoon to extract as much liquid as possible. You should have about 1 cup of blackberry puree.
  • Sweeten the Puree: In a small saucepan over low heat, combine the blackberry puree, granulated sugar, and lemon juice. Stir until the sugar is dissolved. Remove from heat and let it cool slightly.
  • Whip the Cream: In a mixing bowl, whip the heavy cream and vanilla extract until stiff peaks form. Be careful not to overwhip.
  • (Optional) Prepare the Gelatin: If you want a firmer mousse, sprinkle the unflavored gelatin over 2 tablespoons of water in a small bowl and let it sit for 5 minutes to bloom. Then, gently heat the mixture in the microwave for about 10-15 seconds until melted. Stir this into the cooled blackberry puree.
  • Combine: Gently fold the blackberry mixture into the whipped cream until just combined. Be careful not to deflate the whipped cream; you want to maintain that light, airy texture.
  • Chill: Spoon the mousse into individual serving cups or bowls. Cover and refrigerate for at least 2 hours, or until set.
  • Serve: Before serving, top with fresh blackberries and a dollop of whipped cream, if desired.
