Description
This summer-inspired appetizer combines creamy brie, juicy blackberries, and fresh thyme, all wrapped in golden, flaky puff pastry. It’s an impressive yet simple dish perfect for entertaining!

- 1 sheet puff pastry, thawed
- 1/2 pound brie cheese
- 1 egg + 1 tbsp water (for egg wash)
- 1 cup fresh blackberries
- 2–3 tbsp blackberry jam
- 1 tbsp fresh thyme leaves
- 1/8 tsp freshly ground black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Roll out the puff pastry into a 12×12 inch square. Cut three 1/4-inch strips from three sides of the pastry and set aside for braiding.
- Gently cut and discard the top rind of the brie. Place the brie in the center of the puff pastry square. Top with blackberries, drizzle with blackberry jam, and sprinkle with fresh thyme and black pepper.
- Fold the puff pastry over the brie and berries, sealing the edges by brushing them with egg wash. Fold the pastry under the brie and seal completely.
- Braid the three reserved puff pastry strips, place on top of the wrapped brie, and brush with egg wash.
- Place on a baking sheet and bake for 30-35 minutes, or until the pastry is golden brown.
- Let cool for a few minutes, then serve with crackers or bread crisps.
Notes
Optional Larger Brie: This recipe can accommodate a full 1-pound brie if desired.
