Ingredients

  • 4 salmon fillets, skin-on or off
  • 1 tbsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust to taste)
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • Salt and black pepper, to taste
  • 1 tbsp olive oil or butter
  • 1/2 cup sour cream or Greek yogurt
  • 2 tbsp mayonnaise
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 2 tbsp fresh dill, chopped
  • 1 garlic clove, minced
  • Salt and pepper to taste (for sauce)

Instructions

  1. In a small bowl, mix paprika, garlic powder, onion powder, cayenne, thyme, oregano, salt, and pepper to make the blackening spice blend.
  2. Pat salmon fillets dry and rub generously with the blackening spice mix on all sides.
  3. Heat olive oil or butter in a skillet over medium-high heat. Once hot, add the salmon fillets, skin-side down if applicable.
  4. Cook for 3–4 minutes on each side, depending on thickness, until a crust forms and the salmon is just cooked through.
  5. In another bowl, whisk together sour cream, mayo, lemon juice, zest, dill, garlic, and salt and pepper to make the Creole Lemon Dill Sauce.
  6. Serve the salmon hot, drizzled or dolloped with the lemon dill sauce. Garnish with extra dill or lemon slices if desired.

Notes

  • Use Greek yogurt instead of sour cream for a lighter, protein-rich sauce.
  • Pair with rice, roasted veggies, or a crisp salad to complete the meal.
  • The blackening mix can be made in bulk and stored for quick future meals.
  • If using skin-on salmon, press down slightly while searing to get an even crisp.
