Ingredients

Scale
  • 4 large eggs, hard-boiled and chopped

  • 4 slices cooked bacon, crumbled

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter option)

  • 1 tablespoon Dijon mustard

  • 1 tablespoon fresh chives, chopped (optional)

  • 1 teaspoon lemon juice

  • Salt and pepper to taste

  • 1 large tomato, diced

  • 4 large lettuce leaves (romaine or butter lettuce works well)

Instructions

  1. Prepare the egg salad mixture:
In a large bowl, combine the chopped hard-boiled eggs, crumbled bacon, mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, and chopped chives (if using). Stir until everything is well mixed. Season with salt and pepper to taste.

  2. Assemble the wraps:
Lay out the lettuce leaves on a clean surface. Place a generous spoonful of the egg salad mixture in the center of each leaf.

  3. Top with tomato:
Add a few pieces of diced tomato on top of the egg salad in each lettuce wrap.

  4. Wrap and serve:
Fold the sides of the lettuce over the filling and roll it up into a wrap. Serve immediately as a light lunch or dinner option!

Notes

  • Make ahead: The egg salad mixture can be made ahead of time and stored in the fridge for up to 2 days. Assemble the wraps when ready to serve.

  • Customize it: Add avocado slices or a sprinkle of cheese for an extra layer of flavor.

  • Low-carb friendly: This recipe is perfect for those following a low-carb, keto, or gluten-free diet. If you prefer a heartier meal, you can serve the egg salad in a whole wheat or low-carb tortilla.
