Description

Ingredients

  • 2 cups broccoli florets, lightly steamed or raw
  • 1 cup fresh blueberries
  • 1/2 cup sliced almonds or chopped pecans
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled (optional)
  • For the dressing:
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  2. In a large salad bowl, combine spinach, broccoli, blueberries, red onion, and nuts.
  3. Drizzle dressing over the salad and toss gently to coat.
  4. Sprinkle feta cheese on top if using.
  5. Serve immediately or chill for 15 minutes for flavors to meld.
