Ingredients

- 2 cups broccoli florets, lightly steamed or raw
- 1 cup fresh blueberries
- 1/2 cup sliced almonds or chopped pecans
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled (optional)
- For the dressing:
- 3 tbsp olive oil
- 2 tbsp apple cider vinegar
- 1 tbsp honey
- 1 tsp Dijon mustard
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- In a large salad bowl, combine spinach, broccoli, blueberries, red onion, and nuts.
- Drizzle dressing over the salad and toss gently to coat.
- Sprinkle feta cheese on top if using.
- Serve immediately or chill for 15 minutes for flavors to meld.
