Description

    • 1/2 cup unsalted butter (melted)
    • 1 cup sugar
    • 2 large eggs
    • 1/3 cup cocoa powder

  • For the Cheesecake Layer:
    • 16 oz cream cheese (softened)
    • 1/2 cup sugar
    • 2 large eggs
    • 1/2 cup sour cream
    • 1 tsp vanilla extract
  • For the Blueberry Topping:
    • 1 1/2 cups fresh blueberries
    • 1/4 cup sugar
    • 1 tbsp lemon juice
    • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  • Prepare Brownie Base: Mix melted butter, sugar, eggs, cocoa powder, flour, salt, and vanilla in a bowl until smooth. Pour into a greased 9-inch springform pan and bake at 350°F (175°C) for 15-18 minutes. Let cool slightly.
  • Make Cheesecake Layer: Beat cream cheese and sugar until creamy. Add eggs one at a time, then mix in sour cream and vanilla. Pour over the cooled brownie base.
  • Bake the Cheesecake: Return to the oven and bake at 325°F (160°C) for 40-45 minutes, until the center is set. Let it cool, then refrigerate for at least 4 hours or overnight.
  • Prepare Blueberry Topping: In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the berries release their juices. Stir in the cornstarch mixture and cook until thickened. Let cool.
  • Assemble: Pour the blueberry topping over the chilled cheesecake. Serve slices with extra blueberries if desired.
