Description

This Blueberry Brownie Cheesecake combines a rich brownie base with a creamy cheesecake layer, topped with a luscious blueberry sauce. Perfect for dessert lovers, this indulgent treat is a delicious blend of flavors and textures.

    • 1/2 cup unsalted butter (melted)

    • 2 large eggs

    • 1 1/2 cups fresh blueberries
    • 1/4 cup sugar
    • 1 tbsp lemon juice
    • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  • Prepare Brownie Base: Mix melted butter, sugar, eggs, cocoa powder, flour, salt, and vanilla in a bowl until smooth. Pour into a greased 9-inch springform pan and bake at 350ยฐF (175ยฐC) for 15-18 minutes. Let cool slightly.
  • Make Cheesecake Layer: Beat cream cheese and sugar until creamy. Add eggs one at a time, then mix in sour cream and vanilla. Pour over the cooled brownie base.
  • Bake the Cheesecake: Return to the oven and bake at 325ยฐF (160ยฐC) for 40-45 minutes, until the center is set. Let it cool, then refrigerate for at least 4 hours or overnight.
  • Prepare Blueberry Topping: In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the berries release their juices. Stir in the cornstarch mixture and cook until thickened. Let cool.
  • Assemble: Pour the blueberry topping over the chilled cheesecake. Serve slices with extra blueberries if desired.
