Description

Blueberry Fluffy Cottage Cheese Cloud Bread is a light, airy, and delicious bread that combines the goodness of cottage cheese and the sweetness of blueberries! It’s gluten-free, low-carb, and perfect for anyone looking for a healthier alternative to traditional bread. Enjoy it as a snack, breakfast, or even a sandwich base.

Ingredients

Scale
  • 1 cup cottage cheese (full-fat or low-fat)
  • 3 large eggs
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/4 cup blueberries (fresh or frozen)
  • 1 tbsp sweetener of choice (optional, such as stevia or honey)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or use a silicone baking mat.
  2. Prepare the Batter:
In a large bowl, whisk together the cottage cheese, eggs, almond flour, baking powder, salt, and vanilla extract until smooth and combined. If you’re using a sweetener, add it to the mixture and stir.
  3. Fold in the Blueberries:
Gently fold the blueberries into the batter, being careful not to break them up too much.
  4. Shape the Cloud Bread:
Use a spoon or ice cream scoop to drop rounded mounds of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake:
Bake in the preheated oven for 15-20 minutes, or until the cloud bread is golden brown and puffed up. A toothpick inserted into the center should come out clean.
  6. Cool and Serve:
Let the bread cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy as a snack or as part of a meal.

Notes

  • If you’re using frozen blueberries, make sure to thaw and drain them to avoid excess moisture in the batter.
  • For a fluffier texture, separate the eggs and beat the egg whites to stiff peaks before folding them into the batter.
  • Store the cloud bread in an airtight container in the fridge for up to 3 days. It can also be frozen for up to 1 month.
