  • 3/4 cup whole milk
  • 3/4 cup all-purpose flour
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1 tbsp granulated sugar
  • 1 tbsp lemon zest (about 1 lemon)
  • 1 tbsp fresh lemon juice
  • 1 tbsp unsalted butter
  • 1/2 cup fresh blueberries (plus extra for garnish)
  • Powdered sugar (for serving)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Place a 10-inch cast-iron skillet or oven-safe pan in the oven to heat while you prepare the batter.
  2. Make the Batter: In a blender, combine the eggs, milk, flour, salt, vanilla extract, sugar, lemon zest, and lemon juice. Blend until smooth, about 20-30 seconds.
  3. Cook the Dutch Baby: Carefully remove the hot skillet from the oven. Add the butter to the skillet, swirling to coat the bottom and sides. Once melted, pour the batter into the skillet.
  4. Bake: Return the skillet to the oven and bake for 18-20 minutes, or until the Dutch Baby is puffed up and golden brown around the edges.
  5. Add Blueberries: Once the Dutch Baby is done, remove it from the oven and sprinkle the blueberries evenly over the top. The heat from the Dutch Baby will warm the berries.
  6. Serve: Dust with powdered sugar and garnish with extra blueberries and a slice of lemon, if desired. Serve immediately while it’s still warm and puffy!

Notes

  • For a richer flavor, you can use half-and-half instead of whole milk.
  • You can substitute the fresh blueberries with frozen berries, but be sure to thaw and drain them first.
  • If you don’t have a cast-iron skillet, any oven-safe baking dish or pan can be used. Just ensure it’s preheated to help the Dutch Baby rise.
