Description

This Blueberry & Ricotta Croissant with Honey Drizzle is a decadent yet simple pastry that combines the flaky, buttery layers of a croissant with a creamy ricotta filling, fresh blueberries, and a touch of honey for sweetness. Perfect for breakfast, brunch, or a light dessert, this treat is sure to impress anyone who tries it!

Ingredients

Scale
  • 4 large croissants (preferably fresh or day-old)
  • 1 cup ricotta cheese (whole milk or part-skim)
  • ½ cup fresh blueberries (plus more for garnish)
  • 1 tablespoon honey (plus more for drizzling)
  • 1 teaspoon vanilla extract
  • 1 tablespoon powdered sugar (optional, for dusting)
  • 1 tablespoon lemon zest (optional, for a citrusy twist)

Instructions

  1. Preheat the Oven:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. Prepare the Ricotta Filling:
In a bowl, combine the ricotta cheese, honey, vanilla extract, and lemon zest (if using). Stir well until the mixture is smooth and creamy.

  3. Assemble the Croissants:
Slice each croissant in half horizontally to create a top and bottom.
Spread a generous amount of the ricotta mixture onto the bottom half of each croissant.
Sprinkle fresh blueberries over the ricotta filling.

  4. Bake the Croissants:
Place the assembled croissants on the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, or until the croissants are golden brown and the ricotta filling is slightly set.

  5. Finish with Honey Drizzle:
Once the croissants are baked, remove them from the oven. Drizzle a bit of honey over the top of each croissant for added sweetness.

  6. Serve & Garnish:
Garnish with additional fresh blueberries and a light dusting of powdered sugar if desired. Serve warm and enjoy the irresistible combination of flaky croissant, creamy ricotta, and sweet honey!

Notes

  • If you don’t have fresh blueberries, frozen blueberries work too. Just make sure to thaw and drain any excess liquid.
  • You can use a store-bought or homemade croissant dough to make this recipe.
  • For extra flavor, add a pinch of cinnamon or nutmeg to the ricotta mixture.
