Instructions

  1. Prepare the blueberry puree: In a small saucepan, heat the blueberries over medium heat until they begin to soften and release their juice, about 3-5 minutes. Mash the berries with a spoon or use a blender for a smoother consistency. Strain through a fine mesh sieve to remove any seeds, if desired. Set the blueberry puree aside to cool.
  2. Mix the yogurt: In a medium bowl, mix the Greek yogurt with the honey (or maple syrup) and vanilla extract (if using) until smooth and creamy.
  3. Swirl in the blueberry puree: Gently swirl the cooled blueberry puree into the yogurt, creating a marbled effect. Be careful not to fully mix it, as you want to keep the blueberry swirls visible.
  4. Scoop the yogurt bites: Line a baking sheet or tray with parchment paper. Use a spoon or small cookie scoop to drop spoonfuls of the yogurt mixture onto the tray. Each dollop should be about 1 to 2 tablespoons in size.
  5. Freeze: Place the tray in the freezer and allow the yogurt bites to freeze for at least 2-3 hours or until firm.
