For the Roasted Sweet Potatoes:
- 4 medium sweet potatoes, peeled and cut into 1-inch cubes
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp paprika (smoked paprika if preferred)

For the Cilantro-Lime Butter:
- 4 tbsp unsalted butter, softened
- 2 tbsp fresh cilantro, chopped
- 1 tbsp lime juice
- Zest of 1 lime
- 1/2 tsp chili powder (optional, for a spicy kick)
- Salt, to taste
Instructions
- Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the sweet potato cubes with olive oil, cumin, paprika, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on the prepared baking sheet.
Roast in the oven for 25-30 minutes, turning halfway through, until the sweet potatoes are tender and slightly caramelized around the edges. - Make the Cilantro-Lime Butter:
While the sweet potatoes are roasting, prepare the cilantro-lime butter. In a small bowl, mix the softened butter with chopped cilantro, lime juice, lime zest, chili powder (if using), and a pinch of salt. Stir until well combined. - Serve:
Once the sweet potatoes are roasted, transfer them to a serving dish. Top with a dollop of the cilantro-lime butter and allow it to melt over the warm sweet potatoes.
Garnish with additional cilantro, if desired, and serve immediately.
