Description

This classic Bologna Salad is a quick and tasty dish that combines the savory flavors of bologna, pickles, onions, and mayo, creating a refreshing and hearty salad. It’s perfect for a picnic, as a side dish, or even a light lunch!

Ingredients

Scale
  • 1 lb bologna, diced (about 45 slices)
  • 1/2 cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced pickles (sweet or dill, depending on your preference)
  • 1/4 cup mayonnaise (or more, to taste)
  • 2 tablespoons mustard (optional for extra flavor)
  • Salt and pepper, to taste

  • 1 tablespoon fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the Ingredients:
Dice the bologna into small cubes. Also, dice the onion, celery, and pickles into similar-sized pieces.

  2. Combine in a Bowl:
In a large mixing bowl, combine the diced bologna, onion, celery, and pickles.

  3. Make the Dressing:
Add mayonnaise and mustard to the bowl, and mix everything together until well combined. You can adjust the amount of mayonnaise to your desired creaminess.

  4. Season the Salad:
Season with salt and pepper to taste. Stir again to distribute the seasoning evenly.

  5. Serve:
Garnish with fresh parsley if desired. Chill for about 30 minutes in the refrigerator before serving for the best flavor. Serve as a side dish, sandwich filling, or on crackers.

Notes

  • For a Creamier Salad: If you like a creamier texture, you can add a little more mayonnaise or mix in some sour cream.
  • For Extra Crunch: You can add chopped bell peppers or green onions for more texture.

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 2-3 days.
