- 1 box (15.25 ounces) yellow cake mix
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup milk
- 1 cup powdered sugar
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 cup chocolate chips
- 1 tablespoon vegetable oil
Instructions
- Preheat oven: Preheat your oven to 350°F (175°C).
- Prepare batter: In a large bowl, mix cake mix, melted butter, eggs, and milk until smooth.
- Bake: Scoop batter into a greased mini muffin tin, filling each cup about 2/3 full. Bake for 10-12 minutes, or until a toothpick comes out clean. Let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
- Make cream filling: In a separate bowl, whisk together powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
- Assemble: Once cookie bites are cool, use a small knife to cut a little hole in the top of each cookie. Fill each hole with cream filling.
- Melt chocolate: In a microwave-safe bowl, melt chocolate chips and vegetable oil together in 30-second intervals, stirring until smooth.
- Drizzle chocolate: Drizzle melted chocolate over each filled cookie bite.
Notes
For added flavor, consider using a flavored heavy cream or adding a splash of almond extract to the filling.
