Description

A delicious and bite-sized treat that combines the classic flavors of Boston cream pie in a fun cookie form. Perfect for parties or a sweet snack!


Ingredients

  • 1 box (15.25 ounces) yellow cake mix
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup milk
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 cup chocolate chips
  • 1 tablespoon vegetable oil

Instructions

  • Preheat oven: Preheat your oven to 350°F (175°C).
  • Prepare batter: In a large bowl, mix cake mix, melted butter, eggs, and milk until smooth.
  • Bake: Scoop batter into a greased mini muffin tin, filling each cup about 2/3 full. Bake for 10-12 minutes, or until a toothpick comes out clean. Let cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
  • Make cream filling: In a separate bowl, whisk together powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
  • Assemble: Once cookie bites are cool, use a small knife to cut a little hole in the top of each cookie. Fill each hole with cream filling.
  • Melt chocolate: In a microwave-safe bowl, melt chocolate chips and vegetable oil together in 30-second intervals, stirring until smooth.
  • Drizzle chocolate: Drizzle melted chocolate over each filled cookie bite.

Notes

For added flavor, consider using a flavored heavy cream or adding a splash of almond extract to the filling.
