  • 1 cup maple syrup
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1 1/2 cups roasted peanuts
  • 2 cups powdered sugar

Instructions

  1. In a medium saucepan, combine the maple syrup, butter, granulated sugar, and salt. Cook over medium heat, stirring constantly, until the mixture reaches a soft ball stage (around 234°F or 112°C on a candy thermometer), which should take about 10 minutes.
  2. Once the mixture reaches the correct temperature, remove from heat and stir in the vanilla extract.
  3. Add the roasted peanuts to the syrup mixture and stir until they are evenly coated.
  4. Place the powdered sugar in a shallow bowl or plate. Using a spoon or your hands, scoop out spoonfuls of the peanut mixture and roll them into balls, then immediately roll them in the powdered sugar to coat.
  5. Once all of the peanut mixture has been formed into balls and coated with powdered sugar, place the maple nut goodies on a parchment-lined tray to cool and set, about 30 minutes.
  6. Store the maple nut goodies in an airtight container at room temperature for up to one week.

  • For an extra flavor boost, you can add a pinch of cinnamon or nutmeg to the syrup mixture.
  • Feel free to use honey instead of maple syrup for a different flavor profile.
