Ingredients

- 2 slices of bread (white, sourdough, or whole wheat)
- 2 large eggs
- 1 tbsp milk
- 1 tbsp butter (divided)
- 2 slices cheddar or American cheese
- Salt and pepper to taste
Instructions
- In a small bowl, whisk together the eggs, milk, salt, and pepper.
- Heat 1/2 tbsp butter in a non-stick skillet over medium heat. Pour in egg mixture and scramble until just set. Remove from heat.
- Butter one side of each slice of bread.
- Heat a clean skillet or griddle over medium heat. Place one slice of bread, butter-side down, in the skillet.
- Layer one slice of cheese, scrambled eggs, and the second slice of cheese on top. Place the other slice of bread, butter-side up, on top.
- Cook 2–3 minutes per side or until golden brown and the cheese is melted.
- Remove from heat, let cool slightly, then slice and serve warm.
Notes
- Add cooked bacon, ham, or sausage for extra protein.
- Use shredded cheese for more even melting.
- Great with hot sauce or avocado on the side.
