Description

These Breakfast Stuffed Puff Pastry Bars are a perfect grab-and-go option for a delicious breakfast or brunch! Flaky puff pastry filled with a savory combination of scrambled eggs, cheese, and your favorite breakfast meats or veggies.   • 1 sheet Puff pastry, thawed
  • 3 large eggs
  • 1/2 cup Cheddar cheese, shredded
  • 1/2 cup cooked bacon, crumbled (or sausage, ham, or veggies)
  • 1/4 cup Milk
  • Salt and pepper, to taste
  • 1 tbsp Butter, for greasing
  • 1 tbsp Fresh parsley, chopped (optional)
  • 1 tbsp Olive oil, for brushing
  • 1 tbsp Parmesan cheese, grated (optional, for topping)


Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together eggs, milk, salt, and pepper until smooth. Add the cooked bacon (or other breakfast meat/veggies) and shredded cheddar cheese, then stir to combine.
  3. Unroll the puff pastry sheet on a lightly floured surface. Cut the sheet into 4 equal rectangles or squares, depending on your desired size.
  4. Spoon the egg mixture onto the center of each puff pastry rectangle, then fold over the edges to enclose the filling, creating a bar shape. Press the edges to seal.
  5. Place the stuffed puff pastry bars on the prepared baking sheet, and brush the tops with olive oil. Optionally, sprinkle with Parmesan cheese for extra flavor.
  6. Bake for 20-25 minutes, or until the puff pastry is golden brown and the filling is set.
  7. Allow the bars to cool for a few minutes before serving. Garnish with fresh parsley if desired and enjoy!

Notes

  • Feel free to swap the bacon for cooked sausage, ham, or even a combination of veggies like spinach and mushrooms for a vegetarian version.
