- 1 sheet Puff pastry, thawed
- 3 large eggs
- 1/2 cup Cheddar cheese, shredded
- 1/2 cup cooked bacon, crumbled (or sausage, ham, or veggies)
- 1/4 cup Milk
- Salt and pepper, to taste
- 1 tbsp Butter, for greasing
- 1 tbsp Fresh parsley, chopped (optional)
- 1 tbsp Olive oil, for brushing
- 1 tbsp Parmesan cheese, grated (optional, for topping)
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together eggs, milk, salt, and pepper until smooth. Add the cooked bacon (or other breakfast meat/veggies) and shredded cheddar cheese, then stir to combine.
- Unroll the puff pastry sheet on a lightly floured surface. Cut the sheet into 4 equal rectangles or squares, depending on your desired size.
- Spoon the egg mixture onto the center of each puff pastry rectangle, then fold over the edges to enclose the filling, creating a bar shape. Press the edges to seal.
- Place the stuffed puff pastry bars on the prepared baking sheet, and brush the tops with olive oil. Optionally, sprinkle with Parmesan cheese for extra flavor.
- Bake for 20-25 minutes, or until the puff pastry is golden brown and the filling is set.
- Allow the bars to cool for a few minutes before serving. Garnish with fresh parsley if desired and enjoy!
