- 3 1/2 cups broccoli (525g), finely chopped
- 2 cups shredded cheddar cheese (200g)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 8 ounces cream cheese (225g), softened
- 3 chicken breasts
- Salt and pepper to taste
- 14 ounces cheddar crackers (390g), crushed
- 1 cup all-purpose flour (125g)
- 2 eggs
Instructions
- Prepare broccoli mixture: Microwave 1 1/2 cups broccoli for 1 minute. Add cheddar cheese, garlic powder, onion powder, and cream cheese. Mix well.
- Prepare chicken: Butterfly chicken breasts and season with salt and pepper.
- Assemble rollups: Place a scoop of broccoli cheddar mixture on each chicken cutlet. Roll up chicken, securing with toothpicks.
- Prepare breading: Crush cheddar crackers into a coarse texture. Place flour in a bowl. Whisk eggs in another bowl.
- Bread chicken: Coat chicken in flour, then dip in egg mixture, and finally coat in cracker crumbs.
- Bake: Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper. Place chicken rollups on the baking sheet. Bake for 40-45 minutes.
- Serve: Let chicken cool slightly, remove toothpicks, and enjoy!
