Description

Deliciously stuffed chicken breasts rolled with a creamy broccoli and cheddar filling, breaded with crunchy cheddar crackers for a satisfying meal that’s sure to impress!


Ingredients

  • 3 1/2 cups broccoli (525g), finely chopped
  • 2 cups shredded cheddar cheese (200g)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 ounces cream cheese (225g), softened
  • 3 chicken breasts
  • Salt and pepper to taste
  • 14 ounces cheddar crackers (390g), crushed
  • 1 cup all-purpose flour (125g)
  • 2 eggs

Instructions

  • Prepare broccoli mixture: Microwave 1 1/2 cups broccoli for 1 minute. Add cheddar cheese, garlic powder, onion powder, and cream cheese. Mix well.
  • Prepare chicken: Butterfly chicken breasts and season with salt and pepper.
  • Assemble rollups: Place a scoop of broccoli cheddar mixture on each chicken cutlet. Roll up chicken, securing with toothpicks.
  • Prepare breading: Crush cheddar crackers into a coarse texture. Place flour in a bowl. Whisk eggs in another bowl.
  • Bread chicken: Coat chicken in flour, then dip in egg mixture, and finally coat in cracker crumbs.
  • Bake: Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper. Place chicken rollups on the baking sheet. Bake for 40-45 minutes.
  • Serve: Let chicken cool slightly, remove toothpicks, and enjoy!

Notes

For added flavor, consider marinating the chicken breasts for a few hours before assembling.
