- 4 tbsp unsalted butter
- 2 cups cheddar cheese, shredded
- 1 cup boiled broccoli, chopped into bite-sized pieces
- 1/2 cup milk
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 3/4 tsp salt
- 1/4 tsp pepper
Instructions
- Preheat oven: Preheat oven to 400°F (200°C).
- Bake potatoes: Rub potatoes with olive oil, place on a baking sheet, and bake for 1 hour or until tender. Let cool.
- Prepare broccoli: Cut broccoli into bite-sized pieces.
- Stuff potatoes: Cut potatoes in half, scoop out the inside, leaving a 1/4-inch shell.
- Mash potatoes: Mash the scooped-out potato with butter, milk, onion powder, garlic powder, salt, and pepper.
- Combine filling: Add boiled broccoli and 1 2/3 cups cheddar cheese to the mashed potato mixture.
- Assemble: Scoop the mixture back into the potato skins and top with remaining cheddar cheese.
- Bake: Return potatoes to the oven and bake for 15 minutes or until cheese is melted.
