Description

Broccoli-Cheese Casserole is a comforting and creamy side dish featuring tender broccoli mixed with a rich cheese sauce, topped with a crispy, buttery crumb crust. It’s perfect for family dinners or holiday gatherings.

Ingredients

Scale
  • 4 cups fresh broccoli florets (or 2 10-oz packages frozen broccoli, thawed and drained)
  • 1 can (10.5 oz) condensed cream of mushroom soup (or cream of chicken)
  • 1/2 cup mayonnaise or sour cream
  • 1 large egg, lightly beaten
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup crushed Ritz crackers or breadcrumbs
  • 2 tablespoons butter, melted

Instructions

  • Preheat the Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  • Prepare the Broccoli: Blanch fresh broccoli in boiling water for 2-3 minutes until bright green and tender-crisp. Drain. If using frozen broccoli, ensure it’s thawed and well-drained.
  • Make the Casserole Mixture: In a large bowl, combine the condensed soup, mayonnaise or sour cream, beaten egg, 1 cup of the shredded cheddar cheese, chopped onion, garlic powder, salt, and pepper. Stir in the broccoli until well combined.
  • Assemble the Casserole: Pour the broccoli mixture into the prepared baking dish and spread it out evenly. Top with the remaining 1/2 cup of cheddar cheese.
  • Add the Topping: Mix crushed Ritz crackers or breadcrumbs with melted butter and sprinkle over the casserole.
  • Bake: Bake for 25-30 minutes until bubbly and the topping is golden brown.
  • Serve: Let the casserole cool slightly before serving.

Notes

  • Substitutes: You can use cream of chicken soup or a homemade cream sauce in place of cream of mushroom soup.
  • Cheese Variations: Substitute cheddar with Monterey Jack or mozzarella if preferred.
  • Make-Ahead: The casserole can be prepared a day ahead and stored in the refrigerator. Bake just before serving.
