Description

  • 2 large eggs
  • 1/4 cup almond flour or breadcrumbs (optional, for binding)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

  1. Prepare the Broccoli: Steam or microwave the broccoli florets until tender (about 3-4 minutes). Once cooled, chop or grate the broccoli finely to ensure it mixes well with the chicken.
  2. Mix the Fritter Ingredients: In a large bowl, combine the ground chicken, finely chopped broccoli, onion, grated parmesan, eggs, almond flour (or breadcrumbs), garlic powder, onion powder, salt, and pepper. Mix everything until fully incorporated.
  3. Form the Fritters: Using your hands, form the mixture into small patties, about 2-3 inches wide.
  4. Cook the Fritters: Heat the olive oil in a large skillet over medium heat. Once the oil is hot, carefully add the fritters to the skillet, cooking in batches to avoid overcrowding. Fry for 4-5 minutes on each side, or until the fritters are golden brown and cooked through.
  5. Serve: Once cooked, transfer the fritters to a paper towel-lined plate to absorb any excess oil. Serve warm with a dipping sauce of your choice (like ranch, Greek yogurt, or ketchup) and enjoy!

Notes

  • For a low-carb option, use almond flour instead of breadcrumbs.
