Description

Ingredients

  • 2 cups broccoli florets, steamed and finely chopped
  • 1/2 cup grated cheese (cheddar or parmesan)
  • 1/2 cup breadcrumbs
  • 1/4 cup all-purpose flour
  • 2 eggs, beaten
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • Salt and pepper to taste
  • Oil for frying (or baking)

Instructions

  • In a large bowl, combine the steamed and chopped broccoli, cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper.
  • Add one beaten egg and mix well to form a sticky dough.
  • Shape the mixture into small croquettes or patties.
  • Place the flour on a plate, and the second beaten egg in a bowl. Dip each croquette into the flour, then into the beaten egg.
  • Heat oil in a pan over medium heat. Fry the croquettes for 2-3 minutes on each side until golden brown. Alternatively, bake at 375°F (190°C) for 20-25 minutes, flipping halfway through.
