  • 1 1/2 cups shredded cheddar cheese (divided)

Instructions

  1. 1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.

    2. Cook the Rice:

    • In a medium saucepan, cook the rice according to package instructions. Once cooked, set it aside.

    3. Cook the Broccoli:

    • If using fresh broccoli, steam or blanch the broccoli florets until they are tender but still bright green, about 3-4 minutes. Drain well and chop into smaller pieces if needed. If using frozen broccoli, thaw and drain any excess water.

    4. Prepare the Casserole Mixture:

    • In a large mixing bowl, combine the cooked rice, broccoli, cream of mushroom soup, sour cream, milk, 1 cup of shredded cheddar cheese, garlic powder, onion powder, and salt and pepper to taste. Stir until everything is well combined.

    5. Assemble the Casserole:

    • Pour the mixture into the prepared baking dish and spread it evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese and the Parmesan cheese over the top.

    6. Bake the Casserole:

    • Bake for 25-30 minutes, or until the casserole is hot and bubbly. If using breadcrumbs, sprinkle them on top of the casserole about 10 minutes before it’s done baking, allowing them to brown and become crispy.

    7. Serve:
